Why Would You Skip Ginger?
Ginger (adrak) is the backbone of masala chai for most Indians, bold, spicy, warming. But there are many good reasons to make chai without it.
Some people have acid reflux or gastritis that ginger worsens. Some are simply ginger-sensitive. Some are pregnant and have been advised to limit ginger intake. And some, like many people in Rajasthan, simply prefer a smoother, more aromatic chai without the sharp spice.
Whatever your reason, skipping ginger does not mean settling for a boring cup. The following recipes use the natural depth of Assam CTC black tea as the base, and build complexity with other spices and aromatics.

The Foundation: Good Assam Tea
All of these recipes start with good-quality Assam black tea. We use Kitaya Assam Bold Black Tea because its strong liquor holds up well when you add spices and milk. Weaker teas go flat.
Use 1 teaspoon per cup as a starting point and adjust to taste.
Recipe 1: Classic Cardamom Chai (No Ginger)
This is the cleanest adrak-free chai and the easiest to make. Cardamom alone is surprisingly complex, floral, slightly citrusy, warming without any heat.
Ingredients for 2 cups:
- ◆2 teaspoons Kitaya Assam CTC tea
- ◆400ml water
- ◆100ml full-fat milk
- ◆3 to 4 green cardamom pods, lightly crushed
- ◆Sugar to taste
Method:
- 1.Bring water to a boil with the crushed cardamom pods
- 2.Add tea leaves and simmer for 2 minutes
- 3.Add milk and sugar, bring back to a simmer
- 4.Strain and serve immediately
The result is a smooth, aromatic chai with floral warmth. The cardamom blooms beautifully against the malty Assam base.
Recipe 2: Fennel and Rose Chai
This is an unusual combination but genuinely special, sweet, cooling, fragrant. It is particularly good for summer mornings.
Ingredients for 2 cups:
- ◆2 teaspoons Kitaya Assam CTC tea
- ◆400ml water
- ◆80ml milk
- ◆1 teaspoon fennel seeds (saunf)
- ◆4 to 5 dried rose petals, food grade
- ◆1 teaspoon honey, add after straining
Method:
- 1.Lightly crush the fennel seeds in a mortar
- 2.Boil water with fennel seeds for 1 minute before adding tea
- 3.Add tea and brew for 2 minutes
- 4.Add milk, bring to a simmer, strain
- 5.Add honey after straining, honey loses its compounds if boiled
- 6.Float a rose petal in each cup for presentation

Adrak-free chai can be just as rich and aromatic as ginger chai
Recipe 3: Cinnamon and Clove Chai
If you want warmth without ginger heat, cinnamon and clove give you a deeply satisfying spiced chai that is noticeably different from masala chai but just as rich.
Ingredients for 2 cups:
- ◆2 teaspoons Kitaya Assam CTC tea
- ◆400ml water
- ◆100ml milk
- ◆1/2 small cinnamon stick
- ◆2 cloves
- ◆Sugar to taste
Method:
- 1.Add cinnamon and cloves to cold water, bring to boil
- 2.Simmer spices for 2 minutes before adding tea
- 3.Add tea, brew 2 minutes
- 4.Add milk and sugar, strain, serve
Recipe 4: Tulsi (Holy Basil) Chai
Tulsi chai is traditional in many parts of India but rarely seen in cafes. It has a distinctive herbal character, slightly peppery, medicinal, and very calming.
Ingredients for 2 cups:
- ◆2 teaspoons Kitaya Assam or TeaGate Assam Premium Tea
- ◆400ml water
- ◆80ml milk
- ◆8 to 10 fresh tulsi leaves, or 1/2 teaspoon dried tulsi
- ◆Sugar or honey to taste
Method:
- 1.Add tulsi leaves to cold water, bring to boil
- 2.Add tea, brew 2 to 3 minutes
- 3.Add milk, simmer briefly, strain
- 4.Sweeten and serve
Recipe 5: Black Cardamom Chai
Black cardamom (badi elaichi) is completely different from green cardamom, smoky, earthy, camphor-like. A small amount goes a long way and produces a chai that tastes almost like it has been brewed over fire.
Ingredients for 2 cups:
- ◆2 teaspoons Kitaya Assam CTC tea
- ◆400ml water
- ◆100ml milk
- ◆1/2 black cardamom pod, seeds removed and very lightly crushed
- ◆2 green cardamom pods
- ◆Sugar to taste
Method:
- 1.Crush black cardamom seeds lightly, do not overdo it or the smokiness will overpower
- 2.Boil with water for 1 minute, add green cardamom, boil another minute
- 3.Add tea, brew 2 minutes
- 4.Add milk and sugar, strain carefully, serve
The result is smoky, complex, slightly mysterious. This is the chai that converts coffee drinkers.
